Llano Wine & Chocolate Fantasia
The South
Plains Chapter of the Texas Chefs Association and Llano Estacado Winery.
10th ANNUAL CHOCOLATE FANTASIA
Llano Estacado Winery and the
South Plains Chapter of the Texas Chefs' Association Proceeds from the event will benefit West
Texas Parkinsonism Society and the Chefs'
Scholarship Fund.
Chocolate Fantasia is
preceded by a chocolate competition consisting of a showpiece
accompanied by hors d'oeuvres or appetizer portions, and judging will
take place from 4:30 p.m. to 6:00 p.m. Categories include Chef, Food
Service, Amateur and Student.

General Information
- Blank application forms may be copied if
necessary.
- Each participant is required to register at
the Fantasia Registration Table prior to setting up. You will be
handled the following;
- Identification badge
- Event Program (Table assignment)
- Place card
- Set up may begin as early as 2:00 p.m. and
must be completed by 4:00 p.m. at which time the judging begins.
- Announcement of winners and presentation of
prizes will be at approximately 6:00 p.m.
- Tables will be assigned by either the Floor
Chairperson or the Event Committee.
- Exhibitors can expect to be interviewed and/or
photographed at the request of press, radio, or television. Please
try to remain available for this publicity.
- If table decorations are desired, the
individual exhibitor must provide their own. Refrain from items,
motifs, or designs that might identify a particular establishment or
individual (see item #5 on Rules). White tablecloths will be
provided.
- Exhibitors must read the application
completely and realize that all rules or the exhibition must be
observed in order to be eligible to compete. This will facilitate
the work of the judges and the event Committee and provide for the
success of the show.
- Trophies will be awarded for Best of Show,
People’s Choice, and Judges’ Artistic merit acknowledgements.
- Certificates of participation will be awarded
to all exhibitors. Everyone who shows well will be considered a
winner.
- The Fantasia was initially organized as a
competition; however, the competitive nature of the event is
requested to be light-hearted and casual. Developing healthy
rivalries for future events is encouraged.
Rules And
Regulations
- Completed application forms will be accepted
up until the start of the even, space permitting. A maximum of 50
contestants will be accepted on a first-come, first-served basis.
- The Fantasia Event Committee will determine
the location of each exhibitor. The committee’s decision is final.
- Setup in the fermentation and tank room at
Llano Winery at 2:00 p.m. and must be finished by 4:00 p.m. when
judging will begin.
- No exhibitor will be allowed in the contest
area during the judging.
- All materials used must be generic in nature
and cannot identify a certain individual or organization until after
the judging. Placement of these materials is encouraged once the
event is opened to the public at 6:30 p.m.
- Each entry will be given a number and judged
by that number, not by actual personal identification.
- The exhibitor is responsible for maintaining
the appearance of the entry, serving the entry, and answering
questions during the public hours of the show (6:30 p.m. to 8:30
p.m.).
- The Event Committee reserves the right to
remove any display or item which does not meet quality standards for
the Fantasia. This rule will apply mainly to entries which are
deemed unwholesome or offensive.
- The decision of the judges is final.
- Each judge will individually. Each piece is to
be judged by no less than three judges. All scores will be added
and the average found.
- Neither the South Plains Chapter of the Texas
Chefs Association nor the Llano Winery will be responsible for any
breakage or loss.
- Entry categories are define as follow:
Chef – Professional chef, pastry chef, or baker
Professional – An employee, representative, or agent of a
foodservice establishment
Student – High School senior or under
Amateur – No formal culinary training, experience, or affiliation
with a foodservice establishment
Ultimate category
placement is at the discretion of the Events Committee.
Guideline And Criteria For Judging:
Each entry will be
judged on a point system with 40 points being a perfect score. The
judges will be using a worksheet that splits their evaluation into four
categories with a maximum of 10 points for each section:
- Compilation and Preparation – this item deals
with the workmanship of the piece. Judges will be looking at
ingredients used, technique, and structure of the entry. This
category is the most technical and quantitative of the evaluations.
- Presentation – For a good score in this
section, the judges will be looking for simplicity (in concept, not
necessarily technique), cleanliness, balance, color, use of the
medium, movement, spatial effect, and ability to express a theme.
- Originality – Judges will be looking for a
piece or characteristics of a piece that employ a truly unique form
or technique. Keep in mind that originality is not only expressed
in a totally new idea, but is also (even more so) expressed in new
variations on established ideas.
- Overall – This category exists to allow judges
to evaluate the total prize worthiness of the entry.
Taste
The judges will decide
if they will taste your entry. If you DO NOT wish for the judges to
probe or taste your display, please leave a note near the back of your
display and inform a member of the event committee indicating this
preference. The Judges will, however, have a license to taste the
samples you are providing with your display. Styrofoam or fake cakes
are discouraged.
Due to the high level
of competition, which has been a tradition of the Fantasia, taste has
become an increasingly important aspect of judging the entries. The
Llano Wine and Chocolate Fantasia Event Committee has never made it a
requirement for the judges to taste each entry. Even a small bite of
forty or fifty entries would be considerable burden for the Fantasia
judges. We have instructed the judges to taste at will, adjusting the
Compilation and Preparation and Overall categories of the judging
criteria for taste evaluations. The contestants are encouraged to meet
briefly with the judges’ falling the presentation of awards for
comments, critiques, suggestions, and compliments.
Awards
Medals
Commemorative Llano
Wine and Chocolate Fantasia Medals will be awarded to all competitors,
in every category, who receive the points necessary for that award.
Gold, silver, and bronze medals will be available. Entrants will
compete against the Fantasia point system, not each other.
Point system breakdown
for a possible 40 points:
Gold Medal – 35 points
and above
Silver Medal – 30
points to 34.9 points
Bronze Medal – 25 to
29.9 points
Other Awards
Best of Show – this
trophy will be awarded to the entry which is deemed to the public’s
favorite. The recipient will be identified by receiving the most
Peoples’ Choice votes from those attending the event.
Llano Wine and
Chocolate Fantasia Judges’ Artistic Merit Award-This award was created
to recognize high achievement in the areas of originality, theme
cohesion, creativity, and exemplary artistic merit. The recipient will
be chosen by consensus of the Fantasia Judges.
All contestants in all
categories are eligible for Best of Show, Peoples’ Choice and Artistic
Merit Award trophies. These trophies will be awarded in addition to any
medals for which the entry qualifies.
Sanitation
- All contestants are requested to follow and
adhere to any and all sanitation procedures established by the State
of Texas in the preparation of their entries. Copies for the health
code and answers to questions are available at the City of Lubbock
Environment Health Department.
- All contestants are requested to provide
serving utensils for their entry.
- Periodic application of an instant hand
sanitizing gel or liquid during the event is encouraged.
- Approved latex gloves will be available at the
event.
- All entries are required to be served from a
platter, tray, mirror, or other approved smooth, easily cleaned
surface. Showpieces or centerpieces (portioned for service or not)
should also be presented on an approved surface.
- The Fantasia will utilize “mystery shoppers”
to observe and report any sanitation concerts to the Event
Committee. The cooperation of all contestants and their assistants
in this regard is appreciated.
